Falafel with Tahini Garlic Sauce Recipe

Ingredients:

Falafel
1 1/4 cup chickpeas
1/2 cup chopped yellow onion
3 medium garlic cloves
1/3 cup lightly packed parsley leaves
1 1/2 tablespoons lemon juice
2 tablespoons tahini
1/2 – 3/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 teaspoon cumin
1/4 teaspoon coriander
oil for cooking
3 tablespoons pepitas, or sunflower seeds
3/4 cup cooked + cooled millet
1/4 cup partially ground gluten-free rolled oats, or GF oat flour


Tahini Garlic Sauce

3 tablespoons tahini
2 tablespoons olive oil
3 tablespoons lemon juice
2 garlic cloves, smashed
1 teaspoon pure maple syrup, or honey
1/4 teaspoon salt

Preparation Instructions:
1. Place the lemon juice, tahini, smashed garlic, maple syrup, olive oil and salt in a small jar. Seal the jar and shake until fully combined. Set aside for the sauce to thicken and the flavors to develop. Adjust for salt/sweetness if desired. Remove the garlic before serving.
2. Place the peeled garlic cloves in a large food processor and mince the garlic. Add in 3/4 cup chickpeas, the onion, tahini, parsley, coriander, cumin, lemon juice, salt and pepper. Turn on and let process for about 10 seconds, until it reaches a consistency similar to an egg salad.
3. Add in the pipitas, cooled millet and 1/2 cup chickpeas. Pulse about 10 times, until combined with the rest of the mixture. Place the mixture in a large bowl and stir in the ground oats.
4. Heat a 10-inch pan over medium heat with about 1 tablespoon of cooking oil. Form about 8 patties (3-inch each) and place 3-4 patties at a time in the pan once hot. Cook until golden brown (for about 5-7 minutes), then flip and cook until golden brown on the other side (for another 5-7 minutes). Place in a warm oven, add more oil to the pan, and continue with the next batch.
5. Serve on a bun or wrapped in a collard leaf with radishes, cucumbers, avocad, tahini sauce, etc.
