Some super creamy, easy to make, healthy cheesy vegan pasta for you guys. #nomnomnom
INGREDIENTS:
about 200g pasta (I used penne)
1/2 cup raw cashews = 63 g
1 cup pasta water = 250 ml
juice of 1 lemon
1/4 cup nutritional yeast = 12 g
2-3 Tbsp BBQ sauce
1 cup non dairy milk = 250 ml
1 small onion
1 tsp of minced garlic
1 cup or more of spinach (fresh or frozen)
about a cup of pasta water*
spices of your choice (I used seasoned salt and black pepper)
*start by adding in 1/4 cup of pasta water. The sauce is gonna thicken pretty quickly so keep adding in as much of the pasta water until you’ve reached your desired consistency. You can also add in some more non dairy milk if you want the sauce to be thinner.

Just made this it was great and I’m not vegan though I did add other spices because I wasn’t much for the taste at first but I didn’t add bbq either and put rosemary and more garlic and a little cumin and it tastes like regular pasta very good made my parents try it at thanksgiving they liked it so the base of this recipe is not shit and I love it thank you so much

I made this pasta today for the first time it's super good just really really dry and I kept adding more milk but it evaporated , it was my first time hopefully next time it comes out super creamy and thick!! Thanks for the recipe!

I'd probably skip the bbq sauce.. it's going to make the sauce sweet and take away from the cheesiness.

Tasted great!! I did used real milk and real cheese still tasted great the only down side is I didn’t like the texture of the cashiers inside the pasta otherwise I loved it so much thanks!!!:)
