Easy Asian Stir Fry Vegetable VERMICELLI by Tess’s Kitchen
INGREDIENTS:
1/2 pound rehydrated vermicelli rice noodle
1 cup julienne carrot
1 cup julienne scallion
1 cup julienne bok choy or cabbage
1 egg
2 tbsp oyster sauce
2 tbsp soy sauce
1 tsp minced garlic
1/2 tsp minced ginger
In a high heat wok add 2 tbsp oil then your carrots and onion.
Stir fry for 1-2 minutes. Then add your bok choy, garlic and
ginger and stir fry for an additional 2 minutes.
Add the vermicelli, soy sauce and oyster sauce. Stir until well
combined. An easy way is to use two forks and toss until the
vegetables are well combined with the vermicelli.
Serve as a side dish, lunch, dinner or even a night snack.
You can add the vegetables of your choice or even some chicken,
shrimp or tofu.

the vermicelli were all broken. you need higher heat since the egg should not stick to the pan. you need to heat the hell out of the vegetables, chill them with the sauce and then add the noodles while finishing the dish.

Looks delicious! I always shy away from oyster sauce because I'm not a seafood lover at all (fish and chips here only hehe!) But, when incorporated in with other ingredients, does it actually not taste very fishy? I'm sure it gives it a umami type thing I am probably sadly missing…..

I cook this all the time. I LOVE IT. Had it last night and am making it again tonight. Last night i replaced the vermicelli with 2 packets of Oriental raman noodles and added one of the oriental season packs. It was amazing.
