Nut Roast Recipe – A perfect vegetarian dish for a healthy meal

Place the squash in the pan and cook it until it starts to soften. Then, add vac-pac chestnuts, one finely chopped onion, two cloves of garlic, and celery to the pan. Season with sea salt and pepper, a half teaspoon of cayenne, and a little pinch of smoked paprika. Add one level teaspoon of dried oregano and a couple of field mushrooms that have been crudely cut up. Finally, add 40 grams of butter and a little bit of lemon zest to give a nice contrast.
Once you remove the veg from the heat, prepare the mixed nuts. Take 100 grams of mixed nuts, such as brazils, walnuts, hazelnuts, and cashew nuts, and bash them until they are crumbly. Add the nuts to the bowl along with quinoa, dried fruit, and four lovely large free-range eggs. The eggs will help to bind the dish, so mix everything together until you get a good consistency.
Rub a baking dish with butter and line it with greaseproof paper. Pour the nut roast mixture into the dish and squeeze it in as much as you can. Place the dish in the preheated oven for 45-50 minutes, or until it turns golden and crisp.
Now, it’s time to make the sauce. Heat a little olive oil in a pan and add two chilis, a stick of cinnamon, garlic, and a small onion cut into quarters and then into eighths. Add some Thyme to the pan and coat it with the fat, then move it to the side to crisp up. Add tomatoes to the pan and a tablespoon of balsamic vinegar. Simmer for 10-20 minutes to develop the flavors.
Remove the nut roast from the oven and turn it onto its side, removing the greaseproof paper. Pour the sauce over the top and grate some nice bits of cheddar cheese. Top it off with a chili and cinnamon stick and sprinkle with thyme tips. Put the dish back in the oven for another 10 minutes.
Finally, take the dish out of the oven and serve with mashed potatoes and seasonal kale. Pour the sauce over the nut roast and enjoy your delicious, healthy meal.

I've just made this and, while I did enjoy it, I found the dried fruit slightly bizarre in something which is otherwise very savoury. If I made it again, I would leave it out. Other than that, it was decent

the sauce looked nice but with all the flavours you've got going on in the loaf and with the seasoning I feel like you really don't need it.I'd just make the nut loaf and put it on a bed of seasoned potato mash or puree and chuck a nice salad together.
