Kale can provide you with some special cholesterol-lowering benefits if you will cook it by steaming. The fiber-related components in kale do a better job of binding together with bile acids in your digestive tract when they’ve been steamed. When this binding process takes place, it’s easier for bile acids to be excreted, and the result is a lowering of your cholesterol levels. Raw kale still has cholesterol-lowering ability—just not as much.
Kale’s risk-lowering benefits for cancer have recently been extended to at least five different types of cancer. These types include cancer of the bladder, breast, colon, ovary, and prostate.
Kale is now great for detoxing! New research has shown that the ITCs made from kale’s glucosinolates can help regulate detox at a genetic level.
Researchers can now identify over 45 different flavonoids in kale. With kaempferol and quercetin heading the list, kale’s flavonoids combine both antioxidant and anti-inflammatory benefits in way that gives kale a leading dietary role with respect to avoidance of chronic inflammation and oxidative stress.
Ingredients:
1 tbsp organic sofrito: All Organic if possible ( Half of an Onion – 1.5 green peppers – 1 red pepper (optional) – Sea Salt and Black Pepper (to taste) – Two Cloves Fresh Garlic – Olive Oil ( add sparingly as you go, to avoid using too much, not too thick & not too watery) Blend in food processor, only one tablespoon was used in this soup recipe.
9 cups of filtered water
1 organic boxed vegetable broth
1 bag organic frozen mixed vegetables
2tbsp organic grapeseed oil
2 organic garlic cloves
Mineral salt
Organic black pepper
1 tbsp organic dried Italian seasoning
2 tbsp organic dried parsley
Organic garlic powder-to taste
1 can organic cannellini beans
1 can organic diced tomatoes
1/2 bundle organic kale-chopped
6-7 organic chopped potatoes
Handful of organic cilantro
1/2 cup of organic onions-chopped

The reason we use water in cooking is because it’s a conduent for heat so as long as it’s covering all the ingredients then you’re good, u don’t have to be mathematically correct when adding water. Because too much water then you water down the flavor.

can i use sweet potatos instead?
So I watched this video about a week ago and now I'm currently eating a bowl right now and i have to say that this soup is delicious and I'm glad you shared this recipe with me because it is full of nutritious veggies and a fairy easy go to meal have on hand. My only issue was that i am vegan and i made the mistake of just buying a jar of sofrito at the grocery store so i didn't have to make it separate. I did Not realize that it normally has meat in it!!! so i had to abandon my first try and start over. ( the jar was very deceptive). Anyway thanks again for the great recipe its by far the tastiest one I've tried using Kale.

When you add the water first before sautéing the garlic it just taste watery.
I sauté my sofrito first with light olive oil onions, garlic, and whole cumin seeds. Sautéing these ingredients really give that sofrito and extra aroma. I then add the carrots and beans. Add the diced tomatoes to flavor with the sofrito and add the water and broth; last the frozen veggies cause I want to cook them last since I like a little crunch in my veggies. Toward the end I add fresh cilantro and oregano kale.
I like your sofrito and ingredients except for the oil. I don't use grape seed oil. I rather use organic cold pressed light olive oil or coconut oil. Google grape seed oil and why it's not good.

Can you use organic chicken broth?
In stead of a pound of salt which by the way is not a good because it is not healthy for the body, add celery instead beause it is a natural salt additive.
