Mushroom Spinach Enchiladas / Baked tortillas – Taste of Flavours by Karuna. (VIDEO)

If you’re an enchilada lover, try this simple and perfect enchiladas recipe!!

Ingredients :
3-4 Tbsp Olive oil
1.5 cup Finely chopped spring onions
4 cups Roughly chopped mushrooms
1 tbsp chilli flakes
crushed pepper
4 cups roughly chopped spinach
1/2 cup sweet corn
Salt to taste
1/4th cup butter
2 tbsp All purpose flour
1.5 cups Milk
1 cup Cheese
1 tbsp Oregano
1/2 cup Mayonnaise
2 tbsp Sriracha Sauce/ Chili Sauce
1/4th cup Feta cheese (Optional)
6 Tortillas

Method :
Step 1- Mushroom Spinach Filling :
1. Heat oil in a pan and add spring onions. Saute well for 3-4 mins.
2. Now add mushrooms, chilli flakes and pepper. Saute well.
3. Reduce the moisture and add spinach , reduce the moisture completely. Turn off the flame and finally add Salt.
4. Set aside until ready to use.

Step 2 – Sauce
1. Melt butter in a pan and add all purpose flour and mix well.
2. Add milk and bring it to a boil.
3. Now add cheese and oregano and simmer everything for 8-10 mins. Make sure that the sauce is lump free.
4. Add mayonnaise, pepper and sriracha sauce and simmer this sauce for 4-5 mins.
5. Finally add salt and set it aside.

Step 3 – Assembling:
1. Add feta cheese and the sauce to the mushroom and spinach filling. Combine everything well.
2. Put the 1/3rd cup mixture into each tortillas and roll it. Place it on the baking tray and top it with the left over sauce. Then top with cheese.

Step 4 – Baking
Bake it in the oven for 25-30mins at 170 degrees Celsius.
