Alright, I'm a vegan myself and a Spaniard and I must say that while this dish looks awesome, it's not really paella… You DO NOT STIR paella like that, it's not a risotto and you're supposed to cook it in a 'paella' which is the name of the special kind of pan used.
I had vegetable paella when I was in Spain last week and they used artichoke hearts, it was awesome! I am gonna try it next time I make paella

1 tbsp oil
1 red onion chopped fine
1/2 red chili, seeds removed (for more spice leave seeds in or use whole chili)
1 carrot grated
1 zuchinni, chopped
2 red bell peppers
3 tbsp tomato paste
8 oz (200g) cherry tomatos (or 1 can chopped tomatoes)
1 tsp turmeric
1/2 tsp smoked paprika
1/2 tsp black pepper
4 tbsp red wine
2 tbsp tamari
16 oz (500g) short grain brown rice
6 cups (1.5 liter) vegetable stock
1.5 tbsp lemon juice
cashews for garnish (optional)
fresh chives (optional)
1 – Heat pan to high heat and add oil, red onion, and red chili and cook for about 2 minutes.
2 – Add grated carrot, zucchini, red pepper, and tomatoe paste and cook for about 3 minutes, stirring intermittently.
3 – Stir in cherry tomatoes.
4 – Add turmeric, smoked paprika, and black pepper.
5 – Add in red wine and tamari.
6 – Add in brown rice and fry for about 2 minutes, stirring frequently so as not to stick to pan.
7 – Add in vegetable stock and bring to a boil, then reduce to a simmer.
8 – Cook for about 25 minutes to let moisture boil off.
9 – Add in lemon juice and optional garnish and serve.

Happy Pear's take on Greek Paella
Pan on high heat
1.5 tbsp oil
1 red onion
3 cloves of garlic
1/2 a red chili
Cook down 2 min high heat
1 carrot – grated
1 courgette diced into quarters
2 red peppers – cut long ways then half
3 tbsp tomato puree
Fry down three minutes – give it a good stir
200g cherry tomatoes
1 tsp saffron (turmeric if you can't get saffron)
1/2 tsp smoked paprika
1/2 tsp black pepper
4 tbsp vegan red wine
2 tbsp soy sauce
500g polished white rice (short-grain brown rice as substitute)
Fry for 1-2 minutes stir constantly to toast the rice
1 1/2 L vegetable stock
Add vegetable stock and simmer for 25 minutes
Optionally add at end:
Large handful of green olives
Handful of cashew nuts
Juice from 1/2 lemon
Garnish with rough chopped chives

I'm not dogmatic at all when it is about food, but this is not a paella. This rice dish looks yummy, but it is not a paella.
It's the best anti-paella ever, hahaha! Vegan cooking means imagination, why not… 😉
you're supposed to pour the rice in the sign of the cross. Good recipe.
