The most important part of cooking is that the denser vegetables such as yams and potatoes are cut smaller than less dense vegetables like broccoli or brussel sprouts, so that they cook evenly.
How to Roast Vegetables
1. Wash your vegetables and dry them with a paper towel.

3. Place vegetables on a baking tray lined with parchment paper or aluminium foil, and drizzle olive oil on to the vegatbles so that the have a nice sheen. About 1 tablespoon for 1-2 cups of vegetables.
4. Roast vegetables at 450 degrees in the oven for 35-45 minutes, flipping once or twice.

pressure cooking or water less cook ware are the healthy way that retain all the nutrients. your roasting in oil and salt is for taste not nutrition. roasted on a charcoal grill is better. roasting in the broiler gives a better flavor than an oven. cooking in infra red a glowing wire gives best flavor. oils are bad for you as well. grass fed butter or organic ghee are healthier. oils turn esterfied hydrogenated in the body and clog your arteries up. the fat on red meat is the worst thing in the world to eat. sure the flavor and taste is great but what good does it do you with a heart attack or stroke.
Hint to paper use in oven, read the side of the box about temp limit. I was baking bread at 450 and had a little burn. As I am a novice, I didn’t think to look on the side of the box, that listed temp limit to be 400. I have yet to hear any cook, baker or chef in a YouTube vid mention this issue when telling people to use parchment paper.

Olive oil isn't healthy. It causes your arteries to stiffen for hours after you eat it. Just spray water and sprinkle spices on the veggies. There's no reason to pour grease on them. Remember olive oil is high in saturated fats, even IF fat was healthy, which it is not. But he is right, roasted veggies are very easy to make.
