In the westindies, when its made with only the eggplant, we call it baigan choka or balanje choka, theres also tomato choka and coconut choka. By the way, i'm from Guyana 🇬🇾.

very cool and quite accurate! For people who like Indian food I'd say most common spices are (mustard seeds, cumin, turmeric, coriander powder and red chilli powder, onion. garlic and just a pinch of asafoetida if you want ) you literally just add these to any of your dishes. 🙂 WARNING asafoetida can make your food bitter if you add more than a pinch or two its a pungent flavor, so just experiment with it 🙂
I made all three recipes and I thought they were great. My daughter is now a vegetarian so I have been looking for some good recipes. I have these dishes with meat on the side. I found that I had to cook the butternut squash a lot longer than 10 minutes.

We Indian have hundreads of vegetable dishes which our mom cook everyday. Essential ingredients in every Indian dishes whether Veg or Nonveg are 1. Oil, 2. Raw Spices (Herbs), 3. Onions, 4. Ginger and Garlic Paste 5. Variety of Masala Powder thats all about Indian dishes.

Your garlic ginger sauce is kinda thin as compared to how its usually done at home. In homes in India it's usually done less water with the paste, and even a mortar and pestle although it's more work. Regardless, looks good and you do a great job, so however you like it to taste! Cool video
