I wanted to challenge myself to have a three course vegan dinner party for four people and only spend the equivalent of USD. I wanted to make sure that everything is delicious and looks a lot fancier than it costed! I ended up making a vegan caesar salad with crispy chickpeas, vegan lasagne with eggplant and tofu ricotta, coconut mug cakes with coconut milk drizzle and an extra little thing – bruschetta with vegan creamy pesto.

Thanks girl! Here is a tip I found if you are worried about lasagna noodles turning out hard…. Boil them for 3-4 minutes and set aside when you are ready to make the lasagna!
LOL!! youre definitely not going to get that at any US grocery store for $20 US dollars. food is getting very expensive, especially fresh or fresh foods.
When you make the Caesar or the ricotta, how long does it stay good for?

I saw this video when you first made it and last week I just decided to try and make that vegan caesar dressing! As a person that is not vegan, nor totally vegetarian, I HIGHLY enjoy eating plant based foods and this dressing was literally perfectttttt. And it was such a big batch! I absolutely love it❤️
Can you use pasta sauce or tomato sauce as a substitute? Or will it throw the taste off?

I made the vegan lasagna! One tip I would boil the noodles for 15min before putting it in the oven. Other than that this was great! First time making it and Trying vegan lasagna and I loved it!
