I’m gonna be sharing 3 easy, healthy, and tasty vegan meals that only require a few ingredients.

What you’ll need:
LAZY RICE & LENTIL BOWL #1
1 cup white rice (190g), I used Basmati
½ cup red lentils (~90g)
2 bay leaves
2 cups water
1 cup veggie broth (250ml) = 1 cup water + 1 tsp powdered vegetable stock
a few handfuls of fresh baby spinach
for serving:
2-3 Tbsp tomato sauce
nutritional yeast to taste
→ serves 3-4
HUMMUS & RICE NOODLE SALAD
100 g rice noodles (3,5 oz)
½ cup peas, frozen ( )
a handful of greens
a handful of parsley, fresh or frozen
1 tbsp nutritional yeast
for the dressing:
2 Tbsp hummus
1 tsp tahini
juice of 1 lemon
tamari to taste
additional spices if ya like
→ serves 1-2
BBQ BLACK BEAN WRAPS
3-4 tortillas
hummus
greens
1 can black beans (~240g)
½ cup BBQ sauce (125ml)
avocado
nutritional yeast
~ 100g bulgur wheat, uncooked (3,5 oz)
→ enough for 3-4 wraps

Gonna try some black soya noodles for lunch on Monday.
I tried the bbq black bean wrap w/ bulgur/hummus/arugula (my avocado wasn't ripe enough yet, so I left that out), and it was delicious! I used 1/3 rather than 1/2 cup of bbq sauce (because I ran out), and it still turned out great. 😋

For that rice noodle recipe, you referred to it as a salad, so do you wait for the noodles to cool before eating it? It's not supposed to be eaten warm?
I just decided to become a vegan (not sure what to call it) so any tips that you have I would really like to know like what's the difference like in the cookies for example and stuff.
P.S I really enjoy your videos and so far the recipes I've tried are amazing.
The BBQ black bean wrap is a great idea and excellent for transporting to work! I love anything with barbecue sauce! Of course, the other recipes were also enticing. I'm sure I'll try them all.

Great idea, except I have to buy so many stuff, hate grocery shopping. FYI one should wash rice and lentils before cooking

Legit the quick and easy recipes taste better than the casseroles and stuff that take longer to cook. Then again, I’m not the best cook so…😂
I was wondering if there is a substitute for the hummus you used for the sauce? I don't really have hummus on hand. I'll probably get some once Christmas is over, but I'd really like to try that recipe now during the holidays.
