After months and months of you guys asking for a vegan pho recipe, I finally did it thanks to Rose from Cheap Lazy Vegan! I’m a lazy girl and Rose came and made me not be lazy (ironically) and make two epic Vietnamese recipes for you.
Pho chay can be hard to master because traditional, authentic pho is very full bodied with flavour because people would often cook it for 8 hours with a myriad of different spices, animal bones, etc. But I like to think that we really achieved the depth of flavour in this vegan pho recipe thanks to mushroom broth powder!
