I’m not a biscuits or cookies fan because they have lots of flour, but sometimes I like to have something to snack on next to my morning coffee. This is a recipe that I fell in love with and it’s hard to believe that I will ever get bored with it. You know that I’m eating gluten-free (we will talk more often about this subject), so these cookies are gluten free.

I do not like sweet biscuits, so these taste a little tart, but if you prefer them sweeter you can make a change in the recipe. I usually eat two, maximum three biscuits in the morning, about three times a week – with ginger tea, fresh juice or coffee.

Ingredients for 30 cookies:

* A package of 200 gr almond powder
* 9-10 tbsp – sesame seeds
* 2 tablespoons – powdered seabuckthorn
* 4 tablespoons – flaxseed powder made
* 2 tbsp – chia seeds
* 6 tablespoons – Dried currants
* 4 tablespoons – Dried gooseberries
* 3 tbsp – coconut flakes
* 3-4 – tablespoons virgin coconut oil (if you dry the biscuits in the dehydrator) or coconut oil for cooking (if you bake them)
* 1-3 – tablespoons honey (if you prefer)
* 80-100 ml – water (water needed depends on the ingredients)

Preparation instructions:

Mix dry ingredients in a bowl: almond powder, seabuckthorn powder, in powder, chia seeds, gooseberries, blueberries, sesame seeds, coconut flakes. Add honey (agave, raw sugar, molasses, stevia, xylitol – the sweetener used to use), coconut oil and water (so the composition law). Often can not immediately form biscuits (has about 20 g / pcs) and composition leave out 30-40 minutes to allow fat powdered almonds and coconut oil to penetrate composition. If using almond powder in trade you may not bind composition that usually is too dry. The best solution is to get the almonds before making biscuits. We explain why. Primarily because the resulting powder in the kitchen you will be fat and wet and secondly because it is not oxidized (where you have to know how long he stayed, under what conditions it was stored, how long the powder was obtained from the store shelf).

Enter biscuits in drier and leave them over night. If using the oven dries very quickly, in about 15 minutes at 170 degrees C. Ideal would be to cook them at 100 degrees C than leaving him more !!
