Usually Tandoori Masalas have some turmeric in them plus you want the color to be reddish and not yellow…but if you are going for the yellow, yes, you will need more haldi 🙂

My marinade came out brownish, not red. The Tandoori Masala I bought is brownish and red paprika 1/4 tbsp didn't make it red.
1/4 teaspoon of turmeric? That doesn't sound like a lot. Is that really enough? 🙂

I can see Chicken Tandoor Masala in Indian stores. Does that contain any meat powder ? I am a pure vegetarian so was wondering whether I shoudl buy or not for this recepie.
@seorashmi : We used a convention oven but you can also use the convection oven. The microwave will not give the cauliflower a color that the oven can give 🙂
the second time, that is after marinading, when you put the gobhi in the oven; do you put it on convection (baking) or microwave? please advice.
@EvenfallMoon : Smoked Paprika has a very distinct flavor and aroma. It will taste different but should still be good.

@hinz313 back home(south-east indian neighbouring countries), shallots are more commonly found, reddish small onions, atleast thats what i noticed growing up back home i never saw them use yellow onions, large white onions i only saw in fancy restaurants they serve it with salad cuz it has less of a kick then the onions we cook with. I personally find shallots bring much more flavor to the dish.

We have heard that vegetable with color are nutritionally superior to ones without color. This is the only reason we use red onions (not shallots). You can use which ever onion you like. Usually, red onions also work well for recipes that don't require cooking.
They should just put it in another baggy with the tandoori sace and smoosh it in the cracks that way
