Vegetarian Burrito Recipe
Ingredients:
1 bell pepper
2 cloves of garlic or 1 tsp minced garlic
1 large onion
2 tbsp canola oil
Vegetables:
4 to 5 zucchini, diced
2 to 3 carrots, sliced
1/2 lb mushrooms
1 large can tomatoes
1 small can black olives
1 large can diced green chilies
1 tbsp chili powder
1 tsp ground cumin
Guacamole ingredients:
2 to 3 avocados
1 large tomato, diced
1 small can diced green chili
A squeeze of lemon juice
Preparation Instructions:
Saute onion, pepper and garlic until soft. Add any vegetables that you like. Cook until the veggies are soft, drain. Add Mozzarella cheese to your liking. Fill tortillas. Bake 5 to 10 minutes at 350 degrees. Top with Guacamole
