How to make a Vegetable Tagine (VIDEO)

Hi guys and welcome to another video on my channel, She Knows Good Food! This video goes into how to make a moroccan vegetable tagine. I paired it with some couscous and toasted almond flakes. Over time, I will have meal ideas for majority of the different dietary requirements so I haven’t left anyone out 🙂

Ingredients:
Tagine:
-2 red onions
-1 aubergine
-1 courgette
-2 sweet peppers
-10 dried apricots
-2 handfuls of sweet potatoes
-1 tbsp ginger and garlic paste
-2 tbsp tomato puree
-Handful of coriander
-2 tsp cumin
-1 tsp cinnamon
-2 tsp turmeric
-2 tbsp harissa paste
-1 tbsp lemon juice
-1 tin chopped tomato
-1 cup vegetable stock
-10 dried apricots

Couscous:
– 2 cups wholewheat couscous
– 1 cup vegetable stock
1.5-2 cups boiling water
1 tsp harissa paste
1 handful of chickpeas
Equivalent of 2 tsp mixed herbs

Method:
Tagine:

-Chop all the onions, aubergine, courgette, sweet peppers, dried apricots and sweet potatoes as seen in the video

-Heat 5 tbsp oil (I used olive oil) in a large pan on med-high heat

Add in all the vegetables and seasonings except the vegetable stock

Let it simmer for 10 minutes or so or until the vegetables soften a bit

– Add in the vegetable stock and let it simmer on medium heat for about 20-30 minutes

Couscous:

-Add the 2 cups of couscous in a medium bowl and add in the 1 cup of vegetable stock with 1 cup of boiling water

-Add in all seasonings (mixed herbs can be added in at this time or after the couscous has cooked) and mix in well

Add in 1/2-1 cup of boiling water and cover for 10-20 minutes to steam which cooks it
