Ingredients:
8 Red Potatoes
1 cup Sour Cream
1 tsp. Dijon Mustard
2 tbsp. Parsley Flakes
1/2 tsp. Salt
6 Green Onions (chopped)
2 cups Shredded Swiss Cheese
Instructions:
Preheat oven to 350º F.
Place potatoes in a pot, add enough water to cover them, and boil for 20 minutes.
Meanwhile, in a bowl, combine sour cream, mustard, parsley, and salt to make sauce.
Cut potatoes in half.
In a 2 quart casserole dish, layer as follows: half of potatoes, half of sour cream mixture, half of onions, and half of cheese. Repeat layers to finish ingredients.
Bake for 45 minutes.
