Many thanks for the recipe. I've recently gone plant-based for health reasons, and I used to compete in chili contests in OK and TX in my younger days. I'm still learning how to do without the meats I used to use, and my competition grade chili had no beans – so this is a whole new world! I just tried your recipe the last night for the first time, and other than a couple personal tweaks (i.e. I love to add chiptle's with adobo sauce for a smoky kick), this recipe really felt like chili to me. Chili is the one thing I've missed, and you really nailed it. The bulgur and the masa are pure brilliance

You can also put your garlic by putting it inside of a metal bowl and covering with a metal Bowl the same size and shaking it the shell Falls right off I also buy it by the bag at my grocery store I can get 8 oz of already peeled garlic cloves in small baggies inside of the original packaging and that is very convenient as well black garlic is also good in this delicious recipe
if i has a teaspoon of that, i’d be sick for months; that is a mega bowl of nightshades. wow.
When scraping stuff off the chopping board, into the pan, use the back of the knife, don't use the edge.
