GO MEATLESS!: Black Bean and Spinach enchiladas…easy dinner! :) (VIDEO)

We forgo meat for 1 meal a week to help save our family money, but you don’t have to sacrifice taste. Enjoy!

Ingredients you will need:
8 whole wheat tortillas
15 oz black beans
1 1/2 cup corn
6-8 green onions
1/3 cup cilantro
2 tsp cumin
6 oz spinach
3 cups cheese (2 in the enchiladas and 1 on top!)
olive oil

Sauce:
6 oz tomato paste
1/4 cup flour
2 tsp cumin, chili powder, garlic powder, and cumin
salt and pepper to taste
3 cups chicken broth or veggie broth
olive oil
