Ingredients you will need:
8 whole wheat tortillas
15 oz black beans
1 1/2 cup corn
6-8 green onions
1/3 cup cilantro
2 tsp cumin
6 oz spinach
3 cups cheese (2 in the enchiladas and 1 on top!)
olive oil
Sauce:
6 oz tomato paste
1/4 cup flour
2 tsp cumin, chili powder, garlic powder, and cumin
salt and pepper to taste
3 cups chicken broth or veggie broth
olive oil

I just made this recipe and it turned out very well! I made a few changes to the measurements such as using 1tsp cumin for the filling so that it doesnβt taste as strong/salty with all the other spices. Also, I used central market low sodium beans and they were a real game changer to the recipe. Very easy to follow! Would definitely recommend:)

I do something similar with vegetarian refried beans, just spread them right out of the can onto the tortilla, and I don't saute' anything first, just add them, less fat that way. Works about the same, only the refried beans are pretty moist so the end product is a bit softer… and just a little FYI for those who may not be aware, you can make your own chili powder by mixing cumin with paprika. That way you can vary the amount of cumin to suit your family's tastes. I use less because my taste buds say too much cumin is bitter. Just me.. π

thank you so so much! I just haven't had time with a 10 month old to go shopping so i used this recipe as inspiration and made the best enchilada lasagna with only ingredients i already had including left over wraps. It turned out amazing, it was cheap, took only half hour and bonus i didn't leave the house! Thank you Do it on a dime family π p.s my son loves Carson lol its really cute
