Love this little veg stew. Greek maybe not but is has that style and vibe, onions, garlic, chickpeas, eggplant, potatoes, courgettes, mushrooms, tomatoes. Really nice with a little feta cheese on the top if you are vegan.

Just finished eating this one. Par-boiled the potatoes and carrots 4-5 minutes….just to be sure. Used tomato frito but no fresh tomatoes. Excellent… and filling…. definitely a full two hours before swimming job!

Served it with your recipe for garlic bread (without the Parmesan), as I thought that having it with rice was a bit OTT..
