Ingredients
1 cup pearl or pot barley
1/2 cup green lentils
3 frozen spinach nuggets (or 1 cup fresh)
1 small onion
2 cloves garlic
1 large carrot
2-3 celery stalks
1 red bell pepper
1/2 cup corn (fresh or frozen)
1/2 cup peas (fresh or frozen)
1tbsp tamari or soya sauce
1 cup tomato puree
2 bay leaves
1tsp thyme
1tsp turmeric
1/2 tsp paprika
4tsp veg stock
11 cups water

Good soup but you should wash your pot before cooking, it was disgusting inside bottom, yuck!
I don't belong to the SOS Cult of veganism I am just a vegan. So I will be using a couple of teaspoons of healthy oil otherwise there is no redness or mouth feel and oil soluble vitamins are trapped as well as oil soluble flavor compounds. And there's no such thing as being able to water sautee! It's called boiling. I will make this soup because I made 20 quarts of barley tonight for a Persian barley soup and I am disabled so I didn't make it back to the kitchen in time and the vegetables burned. The first thing I have ever burned in my life. So I will use your base done my way with some of that cooked barley. I will use more barley as I prefer it more stew like. And yes when you have that much water and that much grain you need more salt than what you put in. Elizabeth MD PhD nutrition science
