We eat ratatouille all the year actually, not only on summer. But we might not eat it the same way. In winter we might serve it warm just when it's done cooking in the haven, usually quite watery (almost like a soup) and we deep big slices of bread in, all accompanied with some red wine. And in summer we usually cook it in advance and let it cool down in the fridge so we serve it cold on an outdoor table with some white wine and thin slices of bread.
