I know why this recipe seems bland, if you plan on making this please saute the onions, jalpenos, than add spices such as cumin, oregano, coriander, chilli powder, and red pepper flakes for a extra kick or flavor. If you make it as the recipe above, you'll won't it enjoy it.

Hi there, thanks for your question. If you are not a fan of tempeh or tofu, you could try substituting with your extra black beans or adding kidney beans. You could also substitute with a soy based sausage or extra veggies. Hope this helps, enjoy 🙂
tempeh is a fungus based food to which many people may have an allergic reaction. I am sadly one of same. However is there any tastier alternative than tofu you can suggest?

c'mon All Recipes… can't you get Chef John to do these videos? They'd be so much better and lord knows he wouldn't use "enchilada sauce"… I mean, what the hell is that? This sucks.

Instead of the tempeh, I would use shreddred chicken or ground turkey:) Looks great!
What can I use in place of tempe (or however you spell it)?
i would marinate the -tempeh- in a little soy sauce and liquid smoke for a a while and and then fry it until it's dry to give it a more meaty flavor. i know it's not mexican but it's something i would probably try (although i would use a non-dairy substitute).
LOL at how I would never (as a true mexican) eat this by will.
