Hey guys and gals! Yes! it is time for another incredible vegan recipe and so today I am sharing with you all my recipe/version of the infamous lentil sloppy joe. Growing up I never experienced eating sloppy joes due to the fact that my mom never cooked red meat at home, but I ALWAYS remember watching that famous sloppy joe scene on the movie ‘it takes two’ with the Olsen twins and thinking it looked so gross but also wishing that I could eat one myself. So fast forward years later I’m now a vegan and well I wanted a sloppy joe and I freaking got myself a dang sloppy joe and an incredibly delicious and healthier one at that!! I hope yall give it a try and LOVE it!!
Ingredients **makes 4 servings
2 Tbsp veg oil
1/2 a white or yellow onion (diced)
1/2 a green bell pepper (diced)
1 red chili pepper (deseeded and diced) or 1/2 tsp chili powder
2 Cloves of garlic (minced)
1 tsp cumin
1/2 tsp smoked paprika
S+P to taste
1 C brown lentils (rinsed and drained)
1 C water
1 C vegetable stock
1 C tomato sauce
2 Tbsp sugar
2 Tbsp vegan-friendly Worcestershire sauce or 1Tbsp ACV+ 1 tsp yellow mustard
1-2 Tbsp ketchup
