Family approved vegetable/cabbage soup recipe. I have perfected this simple recipe over a million years. I could eat it everyday. Hopefully you will too. Freezes well. Makes a TON of soup. .80 for the entire pot. Easily serves 6 with big portions.
When you are simmering, make sure it is at a low heat. If your soup loses too much water add more vegetable broth and keep the heat low.
*Note about salt. I love it. A lot. More than most. You might be fine with no salt in this recipe. Add it slow. I’m pretty hardcore.
28oz can stewed tomatoes
28oz can diced tomatoes
15oz can tomato sauce
1.5 cup kidney beans
4 cups vegetable broth
3 stalks celery
3 carrots
large onion
2 teaspoons salt
1 tablespoon oil
1 cup sliced mushrooms
2 bell peppers
3 cloves garlic
3 cups cabbage
I am vegan and cannot eat just an all-vegetable meal as I'm also diabetic. I use rehydrated TVP in my soups stews and chilis and you wouldn't know that it wasn't ground beef. 🙂
I've been looking for a cabbage soup recipe similar to the one my late mother used to make and yours looks very much like hers. Thank you so much for videoing it. I only have one question. In watching the video, it seemed like there were other herbs or spices than salt that went into the soup. Would you please share what they were with us? I can hardly wait to try this. I'm salivating already!
I suppose I will need to go back and listen again to know when to hold back on adding which ingredient, so as not to add them too soon, since you listed the ingredients only and not a play-by-play. This was a hit in our house…we use store bought veggie broth and I added a teaspoon of brown sugar. ( an old friend makes a beef based cabbage soup that has brown sugar in it, I wanted to try it with some)

Such colorful presentation on the board. Looks like soup season is about to start. It was 33 degrees when I left for work tonight. I never thought to make our own vegetable broth. Do you store the vegetables in the fridge during the week before you make the broth? That would be a good video demonstration.

I loves soup with cabbage n beans n mushrooms. Amazed that some people that don't like mushrooms. I just found mushroom broth in my co- op yesterday. I don't use much boxed stuff as the broth but I have to try it and possibly make mushroom soup! Yum
This inspired me to make a vegetable lentil soup today! 🙂 Lentils are the only legumes I can digest, beans are terrible on my stomach! LOL I wish I could digest them however because I love them. And I have a question too! Have you been able to find a vegan yogurt that actually taste GOOD?! I tried a lot of them, they are super expensive and just taste horrible to me. I even tried to make my own soy yogurt at home this week. The consistency was awesome, creamy just like greek yogurt, but it had this horrible soy taste, so overpowering… 🙁 I couldn't even eat it with tons of maple syrup. Have a great weekend! Hugs
