Spicy and rich vegetarian ramen recipe made with soy milk and vegetarian dashi. This ramen broth is super rich and milky, and it just might trick you thinking it’s Tonkotsu broth!

Ingredients:
For Vegetarian Dashi
¾ cup water
1 1”x2” (2.5 x 5 cm) kombu
1 dried shiitake mushroom
For Soup
1 Tbsp. sesame seeds
2 cloves garlic
½” ginger
Scallion (white part)
2 tsp. sesame oil
2 tsp. chili bean paste
2 tsp. miso
1 Tbsp. sake
2 tsp. soy sauce
1 cup unsweetened soy milk
½ cup dashi
½ tsp. Kosher salt
Dash of white pepper
For Ramen
1 serving ramen noodles
For Ramen Toppings
½ Ramen egg (RECIPE: check my video) (omit for Vegan)
Spicy Bean Sprout Salad (RECIPE: check my video)
Homemade vegetarian kimchi
Corn
Scallion (green part)

Can you substitute Chili bean paste with Gochujang? Do they taste similar?
Can you substitute coconut milk for the soy milk? I don’t like soy milk!
Would gochujang/korean red chilli paste be a good substitute for the broad bean paste?
Vegetarians don't eat eggs. That is pseudo vegetarian.

is it possible to skip the sake? because i am a moslem and don’t drink any alcohol or eat any dishes that contain it. and in Indonesia there are 2 kinds of soy sauce, the sweet and savoury. what is the best description for the soy sauce you use? or I can use any soy sauce as long as it is a japanese soy sauce? thank you
