Cannelloni refers to a cylindrical style of pasta dish. The pasta is filled with a filling and covered in sauce. This recipe uses spinach and ricotta and is one of the most popular of cannelloni. You can use pre-made cannelloni cylinder shape pasta or use lasagna sheets and then roll them up. It’s usually best to first blanch any dry pasta in water for a few minutes although many still use the pasta uncooked. I find that can lead to problems of finding uncooked pasta so it’s best to experiment first if choosing the uncooked version. Another alternative is to use fresh lasagna sheets (noodles) as these won’t require pre-cooking. Either way, I’m sure you’ll enjoy this cannelloni.

Also a little info if it is lenten season or you want a little protein in your meal, saute' some shrimp, i found the P&D 26-30 size works best, saute' the shrimp in a little bit of olive oil and butter, about 1 minute each side, you do not want them cooked all the way through as they are going to be baked in the oven inside the cannelloni, when filling the cannelloni(do not put shrimp in piping/pastry bag) place a shrimp in the middle of the shell, pipe in some filling, place another in, and fill one end, do the same to the other end so you have 3 shrimp per shell. If the shrimp seem to large , you can cut them in half, no tails, and bake as per Joel's recipe, they are delicous.
Here is a tidbit of info, whoever does this recipe husband/wife whatever, if you send the non cooker, which in this case is my wife, out to the store, be specific on certain items like ricotta cheese. If she or they bring back low fat or non fat ricotta like the same you can get with cottage cheese, put it in the fridge and let them eat it with some crackers and tomatoes or whatever, because your cannelloni is basically going to have no taste or worse yet, taste like crap.Purchase whole fat ricotta , if your on a diet , you are better off eating 1 or 2 good ones, than 4 or 5 crappy ones, i promise. The crappy low/non fat ricotta is like eating 2 or 3 plain rice cakes, not the texture, just no flavor. BTW, that info is from the school of hard knocks,lol.
