Vegetarian Mexican Tostada (VIDEO)

In this video, we will be learning how to make vegetarian tostadas. Tostadas are a popular Mexican dish that consists of a crispy tortilla topped with a variety of ingredients. Today’s recipe will be a vegetarian version of this dish, but you could also use meat if you prefer.

To start, we will need some basic ingredients such as a bag of tostadas, pinto beans, oil, avocado, shredded lettuce, onions, queso fresco, green salsa, and some lime. Some of the ingredients from the original recipe, such as tomatoes and shredded cheese, are not included as the author did not like them. However, feel free to add them if you like.

To begin, we will cook the pinto beans. Heat up a pan with some oil and add half a cup of chopped onions. Once the onions have caramelized, add the whole can of pinto beans to the pan and mix it up constantly. Mash the beans to your preferred consistency and add salt and pepper for flavor. Let it simmer for 15 minutes.

While the beans are cooking, we can prepare the other ingredients. Dice up some queso fresco and set it aside. Blend some avocado with lime juice for a creamy texture. Shred some lettuce and chop up the remaining onions.

To assemble the tostadas, place a tostada on a plate and spread a generous amount of refried beans on top. Add shredded lettuce, chopped onions, and diced queso fresco. Finally, drizzle some avocado sauce and green salsa on top for extra flavor.

This vegetarian tostada recipe is quick and easy to make, perfect for a weeknight dinner or a weekend lunch.
