This Slow Cooked Veggie Chili can be made on the stove or in a crockpot and is great recipe to add to your weekend meal prep!

SLOW COOKED VEGGIE CHILI
1 medium onion, diced
1 bell pepper, diced
3 cloves garlic, chopped
1-15 oz. can of diced fire roasted tomatoes
1-15 oz. can of chickpeas, drained and rinsed
4 cups butternut squash, peeled, seeded and cut into 1-inch cubes
2 cups low sodium vegetable broth
3 chipotle peppers in adobo
2 tbsp. ground cumin
1 tbsp. chili powder
2 tsp. smoked paprika
2 tsp. curry powder
Salt and pepper to taste
1 cup frozen corn
2 cups stemmed and chopped kale
Place all of the ingredients into a large crockpot (I used a 6 quart crockpot) and con on high for 3-4 hours or on low for 6-8 hours.
Serve with your favorite chili toppings (I like diced onion, avocado, and jalapeños). Enjoy!
Makes about 10 cups.
*If you do not like spicy chili, be sure to remove the seeds from the chipotle peppers before chopping them.
**If you don’t like chickpeas, feel free to sub in any type of bean you prefer (kidney or pinto would be great options).

No need to worry if you're late getting home. I also love the locks on the top of the crockpot! You can take it in the car and not worry about spills, the top stays on and you carry it using the handles on the side. It's easy to clean because you take the pot out when you're done, wash it then put it back to store it. So many reasons to love this crockpot!

I subbed sweet potatoes for squash and used kidney beans. I also was short on time, so I let it simmer on the stove for a couple of hours. Excited to try it! Do you have a good recipe for cornbread that pairs well with this?

looks delis but I can't have anything remotely hot. what would you suggest in place of the red hot peppers that would give it a taste. taking out the seeds is still too risky for me. also the one spicy spice you put in. otherwise everything looks great. Do you have any recipes you can do for ppl who have high cholesterol. ty

Dani, I just put the chili recipe in the crockpot. I have most of a small can of chipotle peppers in adobo sauce left. Do you have any recommendations for using the leftover peppers? This is my first time using them.

I am so into this. I won't even make regular meat chili without the large 32 oz can of pumpkin puree. This meal is so added to my menu. Oh my goodness. All that is missing is corn bread. My grandmother use to make chili using lentils. And she would add a dollop of peanut butter to her bowl. sounds goofy, but it's actually very good.
