I use soft tofu as the "sauce" for the egg salad, but I imitate the texture of eggs with chopped up cooked noodles. Literally the same texture as boiled eggwhites

I use black salt in my "vegg" salad too. It's got such authentic flavour! Can't wait to try these root veggie pancakes.
For the pancakes you probably dont need a flax seed egg if you use porridge oats instead of flour & pour a little hot water on them from the kettle before stirring.

This looks AMAZING! I'm not vegan, but trying to transition to a vegetarian diet. I have a type of IBS that prevents me from eating gluten and dairy products, but most vegetables and fruits, thankfully, don't bother me. The fact that the pancakes are savory AND use gluten-free flour is a game-changer for my morning routine. Thank you!
