   It is okey to cook dishes like this with extra virgin olive oil? As far I know EVOO has less smoke points

   Albert, is it possible to use defrosted/drained frozen spinach? Always got that handy, but sometimes it's a trek to find fresh spinach. Love your site. Many thanks for sharing your wonderful recipes.
