Quinoa and Black Bean Salad
For the Salad:
1 cup uncooked quinoa, then cook.
1 (14 oz) can of black beans, drained and rinsed.
1 red pepper, chopped.
1/4 cup fresh cilantro, finely chopped.
2 green onions, chopped.
1 cup fresh, canned or frozen corn.
1 small avocado, chopped into 1 inch pieces.
For the Dressing:
4 to 5 Tbsp of fresh lime juice (about two small limes)
1/2 tsp sea salt or to taste.
1/2 tsp freshly ground black pepper.
1 or 2 garlic cloves, minced.
1/4 cup cilantro, finely chopped.
1/4 cup extra virgin olive oil.
1/2 tsp ground cumin, or more to taste.
If you like it a little more zesty then add a tsp of Tabasco or a small chilly pepper.
