you could always save the unserved leftover broth.. and add noodles when you want them again.. the broth could be frozen or refrigerated for couple of days… when buying noodles.. look for noodles with less sodium.. and make sure to never defrost the noodles..

This is so NOT how we make udon broth in Japan! Dried mushroom and kombu part is good, but adding that much sugar? wtf. We use NO sugar in the broth. Use mirin or sake instead to get a little sweetness.
